Oven baked meat

Roasted meat mix:


1 rack of lamb

1/2 kilo sirloin

1/2 kilo lamb liver

1/4 kilo lamb kidneys

1 tsp salt

1/2 tsp pepper

1/2 tsp ground nutmeg

1/2 kilo onion

1 sheet of parchment paper


1- Cut the liver into cubes, and the kidneys into halves. Season the liver, kidneys, rack of lamb and sirloin with salt, pepper and nutmeg.
2- Chop the onions into rings and mix into the meat assortment. Place the parchment paper on a tray. Place the meat and onion mixture in the middle and wrap well around the meat. Use a knife to make some holes in the top.

3- Place the wrapped meat in a hot oven for at least one hour. Sprinkle the outer side of the  parchment paper with water whenever it dries until the meat is completely cooked. Unwrap the meat and serve on a round plate.
